|Lemon/Garlic/Thyme Roasted Chicken|

This is a super easy recipe that I love to make. It’s a hit with the hubby every time! This is a delicious and EASY recipe! What a great idea for when you have guests over- They’ll think you slaved in the kitchen all day! Ha!

Ingredients:

  • 1 whole chicken …….. approx. 8 lbs (gizzards & extras removed)
  • 1 lemon……………………………………………………….cut into quarters
  • handful of garlic cloves………………….peeled and left whole (4-6)
  • butter…………………………………………………………..2-3 tablespoons
  • Paprika………………………………………………………..Just a Pinch  :^}

*salt & pepper to taste*

I rub butter inside and outside of the skin. Season with salt and pepper.

Then I stuffed it with lemon, garlic and fresh sprigs of thyme.

Then I sprinkled the outside with paprika and topped it with more sprigs of thyme.

(I don’t tie the bird closed.)

Next I place the oven-safe pan in the pre-heated (450 degrees) oven for 15 minutes to make it golden brown. Then lower the temp to 400 and cook for another hour or until the internal temperature is 165 degrees.

 

Here, I tried it in a cast-iron skillet. I think I like this method more actually!
